This granular natural fruit acid has a strong, tart taste and is often used as flavouring for foods or beverages.
Use it to enhance fruit flavours in hard candy, as an economical, easy way to acidify home canned tomatoes, or as an antioxidant to control the discolouration of fruit.
May also be used as a substitute for lemon juice in some recipes.

Use ¼ teaspoon/1 mL of citric acid per 500 mL jar of tomatoes to ensure adequate acidity for safe heat processing of tomatoes in a boiling water canner.
For hard candy, use 1/8 teaspoon per 2 cups of sugar.
